This beer is brewed with heritage Red Fife wheat, a robust, flavorful variety that nearly went extinct in the 20th century, due to the move towards easier to grow, more disease-resistant varieties as bread making became heavily industrialized. Fortunately, demand has returned due to renewed interest in artisanal baking and brewing (even before the pandemic, ok?). NYC Grains Project helped source this wheat for us. Without their help and Gianforte's commitment to organic farming, this beer would not be what it is.
Dictator is a mainstay in our saison portfolio and takes 10 to 12 months to produce start to finish. It spends 6 of those months in wine barrels, followed by a minimum of another 3 months bottle conditioning. More tart than and , Dictator boasts big wine-like aromas and stone fruit flavors. Sour beer lovers will appreciate this one.
